Gunpowder Green Tea (Pearl Tea) Uncle Lee's Gunpowder Green Tea in Bulk derives its name from the shape of the finished tea leaves. Legend has it that the name 'Gunpowder' was given by an imaginative English clerk who thought that the dark green tea leaves, rolled into round pellets, looked like gunpowder. In China the name for gunpowder tea is 'pearl tea'. Rolling the leaves has a beneficial effect on the quality of the tea. Not only does it force to the surface flavorful juices that otherwise would remain in the leaf, but the pellet retains its shape during firing and keeps its freshness longer than other loose leaf teas. Our Gunpowder Tea has a dark golden color, roasted or toasted taste with a strong aftertaste lingering in the front palette, and a strong roasted or toasted aroma. When brewed, the teas unfold into large leaves. Our Gunpowder Green tea is rich in natural fluoride, calcium and anti-oxidants and has only 20 to 30 mg. of caffeine per cup.

The fresh water used to make this tea should not be boiling but should be about 160 to 180 degrees F or 90 to 100 degrees C. Use about one teaspoon of tea for every 8 ounces (150 ml) of water. Steeping time should be anywhere from 2 to 5 minutes depending on desired strength and quantity of tea. As a rough guide, the higher the temperature of the water or the greater the amount of leaves used, the shorter the steeping time should be. When preparing this tea, the leaves can be used multiple times, until the flavor of the tea is exhausted. The use of a covered glass or ceramic cup is sometimes recommended for steeping in order to appreciate the tea leaves. A stainless steel 'tea ball' is also recommended for steeping the tea. Each canister of Uncle Lee's Gunpowder Green Tea will yield approximately 50 to 75 servings.
